I think for wine you'd normally use "bruno", not marrone or castano.
The preposition will depend on your sentence structure. You might say for instance:
- un vino di colore bruno
or
- [...] dona al vino un colore bruno
or
- Il suo caratteristico colore bruno [...]
or even just
- un vino bruno
...It all depends on the full context.

il colore di marrone

brown = marrone
color = colore (masculine, so "the" = "il")

BUT:
The color brown = Il colore di marrone (not "il colore marrone"! It's just the way the language works that the preposition "di" is thus required.) If you have any other questions, please ask. I hope I've helped!
P.S. If by "brown" you're referring to hair color, then "castano" would be better than "marrone", and if you're referring to brown/bronzed skin, then "scuro" is the best word.
