Source text - Italian • All’interno dei sotterranei del trecentesco castello di San Giovanni d’Asso, è situato il primo Museo e Centro di Documentazione sul tartufo. 250 metri quadri suddivisi in quattro nuclei espositivi che si caratterizzano per la forte valenza didattica e per l’esaltazione del rapporto tra il territorio delle Crete Senesi ed il suo frutto più ambito.
• I frammenti delle pitture che ornano le pareti e la volta della “strada coperta”, riproducono motivi consueti adoperati per dare un senso di magnificenza agli intonaci. La pelle di vaio, (pelliccia di scoiattolo) è un elemento ricorrente così come i motivi a racemi (tralci vegetali intrecciati) in verde e fiori stilizzati in rosso.
• Per questa complessità, e per le dimensioni ridotte degli spazi allestitivi, abbiamo ampliato il museo con un Centro di Documentazione che raccoglie ulteriori informazioni/ documentazioni ed inoltre costituisce un elemento dinamico per la stessa vita del museo.
• In un “labirinto d’interpretazioni dove le folgori di Zeus si mescolavano ai fuochi sotterranei di Ade” non poteva mancare l’idea che i tartufi fossero “frutti di diaboliche stregonerie”.
• Il tartufo assunse presto il simbolo della doppiezza. In una celebre commedia di Molière “ Le Tartuffe ou l’imposteur”, il Tartufo rappresenta l’ipocrita morale dei gesuiti dell’epoca. Il tartufo entra così nella letteratura come simbolo della falsità.
• Coltivare i tartufi è sempre stata l’aspirazione di ricercatori e tartufai, a causa dell’alto valore gastronomico e commerciale che hanno questi preziosi funghi. Attraverso i tempi sono state sperimentate varie tecniche di coltivazione che si sono di seguito sviluppate con il progressivo approfondimento delle conoscenze sulla biologia dei tartufi.
•IL TARTUFO - La biologia - Il ciclo di vita
a) Il ciclo biologico dei tartufi non è ancora del tutto conosciuto avendo uno sviluppo sotterraneo. Per la descrizione del ciclo partiamo dal corpo fruttifero che contiene un gran numero di organi preposti alla diffusione della specie (ascospore). Inizialmente il corpo fruttifero è costituito da un intreccio globoso di filamenti fungini (ife) che si sono sviluppate a partire dall’unione simbiotica della radice della pianta e del fungo (micorrize). In questa fase il tartufo è ancora collegato alla pianta (fase simbiotica). Quando raggiunge le dimensioni di 1 mm di diametro (circa 3 milligrammi di peso) il corpo fruttifero presenta già la struttura definitiva: scorza esterno (peridio) e la polpa (gleba) é costituita da vene sterili e vene fertili. A questo stadio, probabilmente, il fungo si distacca dalla pianta e inizia a vivere autonomamente. Vivendo sottoterra non può, come le altre piante utilizzare (la fotosintesi clorofilliana), e si alimenta con le sostanze organiche (foglie,rami, ecc,) presenti nel terreno (fase saprofitica).
Translation - English • Located in the foundation of the thirteenth century castle of San Giovanni d’Asso is the first Museum and Centre for the Documentation of Truffles – or as they are called in Italian, “Tartufo.” The 250 cubic meters of space are divided into distinct educational exhibition areas which explain the path of the truffles and pay tribute to the relationship between the territory of Crete Senesi and its treasured fruit.
• The fragments of images decorating the walls and vaulted ceiling of the entrance – what was once a covered street – represent typical motifs and demonstrate the magnificence of the plaster frescos. The alternating abstract medallions known as “squirrel skins” are a recurring element like those of the green entwined plant shoots and stylized flowers in red.
• Considering the limited space of the museum and the range of pertinent materials relating to the subject of truffles, adjoined to the museum is The Centre of Documentation. It is the goal of the centre to collect and archive materials (informational and documentative, historic and scientific), while providing a dynamic learning resource within the museum complex.

• The cultivation of truffles has always been the aspiration of researchers and truffle hunters due to the extraordinary value both commercially and gastronomically of these precious fungi. Through the ages there have been various attempts and technical experiments made towards their cultivation, all of which has led to the greater understanding of the biological nature of the truffle.
•THE TRUFFLE - The Biology - The Life Cycle
a) The biological cycle of the truffle is still not entirely understood as a consequence of its development entirely underground. In describing the cycle of the truffle let us start with the fruit, or body, of the truffle which has a large number of tiny agents known as ascospores that are responsible for the propagation for the species. Initially, the body of the truffle is made up of a globulous web of fungus filaments, or hyphae, that develop from the symbiotic union formed between the roots of the tree and truffle fungus, or mycorrhiza. During this period the truffle is connected to the plant (the symbiotic phase). When the truffle reaches 1 mm in diameter (approximately 3 milligrams of weight) the fruit-bearing body already has a definite structure: the outer rind known as the peridium, and the pulp or gleba as it is called, is made up of sterile and fertile veins which are respectively, dark and light in colour. It is probably in this stage that the fungus detaches from the host plant and begins to live independently. Living under ground as they do, truffles cannot engage the process of chlorophyllous photosynthesis, taking nourishment instead from organic substances such as leaves and branches, already present in the ground (the saprophytic phase).
