Thermoformanlange

draught damper
In UK, we would call it simply a "damper". However, I feel the word Zug (= draught) can be included here- it is in the source text, adds to the description, and makes sense in English.
I would not use the word "flue", as this means the duct (or chimney) itself and not the motion (Zug) of air or gases passing through it. Furthermore, "flue" tends to be used for hot exhaust gases from or combustion equipment burners rather than a simple ventilation/extraction system.
Because the "Unterbrecher" is adjustable, words indicating simply a "shutting off" would be misleading. Therefore "damper" fits the bill better, IMO.

P.S. even if the damper is not adjustable and is used to shut air flow off completely (refer to further source text) it is still the correct term.

slide damper

shut-off damper
Your application involves the extraction of fumes from the forming process.
The purpose of the Zugunterbrecher is to ensure that in case the fan of an individual exhaust duct does not function properly (sensor monitoring), the duct is shut off to prevent fumes from the other ducts entering the processing area.
From the description of a fume extraction hood:
- Shut-off damper included
(seer ref, one of several for 'shut-off + damper + fumes')
