So far, I've translated this as "activity-based, cognitive schemata," but I'm not very satisfied with that. Any other ideas?

I am sure this could be polished, but this is what is meant. Cognitive schemata that allow a person to orientate their actions in a structured, meaningful manner.

Just parsing. "Orientierung" gives you the "direction" (North, East ..).

This is a general statement which make it less relevant whether an action/behavior is deemed "practical" or not.
