Well, 'moût' is normally 'must', though this could hardly really be described as an alcohol, more likely a stage in the process of producing alcohol; but you aven't really given us enough context to be really sure...

Well, it's certainly 'must', though you'd need to be more of a wine expert to knwo precisely what distinction they are making here; perhaps 'must' is direct from pressing, while 'jus' is other kinds of juice?

Yes, in the light of that vital extra context (being sold 'as is'), I rather agree that 'partially-fermented' is entirely appropriate; and it would also explain the difference between 'grape must' and simply 'grape juice', all depending on what the purchaser intends to use it for....
