Don't like expressing it this way with the gerund, you might be able to find a better way to word it.

It means not just putting a tablecloth on the buffet; but also draping to hide the legs with this sort of 'skirt' (have to say I love the idea of a petticoat!). Sounds like they're aiming 'posh'!

I don't know if the term can be used in this context, but another word sometimes used for this kind of think is a 'valance' — never actually heard it used in terms of horeca, and don't know if it can be applied to soemthing so long?
