Per table si può utilizzare piano di taglio o di lavoro, ma ho trovato anche un'azienda che parla di cabina di protezione che racchiude completamente l'area di lavoro.
Resterei su piano di taglio chiuso, che mi sembra conciliarsi meglio con l'argomento del brano che hai riportato, cioè le limitazioni dell'area di lavoro (o meglio, del riposizionamento dei fogli sull'area di lavoro) dovute alla presenza di una copertura protettiva.
