A method for producing bread using aerated dough forming an aerated foam-like structure, comprising processes of mixing dough, aerating the dough, dividing the dough into portions of specified weight and baking of the bread, characterized in that the division process is performed after completion of the mixing process, before the aération process, which is performed separately for each portion of dough, after which the aerated dough is baked into bread, wherein the aération process is performed under a pressure of no less than 0.3 MPa

Dans le processus de fabrication du pain, après avoir mélangé les ingrédients de la pâte jusqu'à ce qu'elle soit lisse, on la laisse reposer pendant huit heures minimum. Une fois qu'elle a gonflé elle prend de l'air(pâte aérée). On la découpe ensuite, et on la presse avec ses doigts pour la dégazer.
