Eason Chan is a Hong Kong singer, but "如果我是陳奕迅" is the name of a song sung by a band called "Mr."

The verb may be "were" or "am". It is because this song is included in their album "If I am". Also, according to this webpage:

The band wants to tell people that things can come true.

If you still think the singer cannot become Eason Chan logially, you can use "were" instead.
