« Je crois que moi aussi je voulais partir là-bas. Nous avons donc pris la route et nous avons franchi à pied les montagnes de Noto en deux ou trois jours. Tantôt mon père me portait, tantôt je marchais. C'était en tout cas le premier voyage de ma vie. »
Le trajet de Suzu à Knazawa se faisait alors de préférence par la voie maritime. Mais en raison des orages de fin d'automne et d'un temps qui se gâte vite dans ces régions, la famille de Kinu choisit le chemin de la montagne.
Ils avançaient avec difficulté en se frayant un passage au milieu des arrow-roots et des buissons touffus. Les kakis faisaient ployer leurs branches. Les fruits mûrs déjà tombés jonchaient le sentier comme recouvert par un long tapis rouge orangé semblable à une ceinture, obi, de kimono déroulée qui teintait les modestes sandales de paille tressée. Sabler dans un batteur à petite vitesse la farine avec le beurre. Ajouter le lait dans lequel on aura fait dissoudre le sel et le sucre. Terminer en ajoutant le jaune d’œuf jusqu’à obtention d’une pâte homogène sans la « corser »
Reposer la pâte au minimum 2 heures au froid.
Etaler sur une épaisseur de 3 mm environ et chemiser votre moule.
2/ Confection de la quiche :
Sur votre fond de pâte, étaler harmonieusement les lardons et le gruyère râpé.
Faire l’appareil à flan salé : mélanger les œufs et les jaunes. Assaisonner et mélanger au fouet. Ajouter la crème et le lait. Verser sur le fond de tarte.
3/ Cuisson :
Enfourner immédiatement dans votre four préchauffé à 220 °C, laisser cuire 10 min, puis baisser votre four à 175°C et cuire encore 30 min.
Déguster avec une bonne salade.

Use a mixer at a low speed to blend the butter and flour together until it resembles small breadcrumbs. Dissolve salt and sugar in the milk and add to mixture. Finish by adding egg yolk until you get consistent pastry without overworking it.
Let the pastry rest for at least 2 hours in the fridge.
Roll out to a thickness of about 3 mm and grease your tin.
2/ Make the quiche:
Spread the bacon cubes and grated Gruyère cheese evenly over your pastry base.
Make a savoury flan mix by beating the eggs and egg yolks. Season and whisk. Add the cream and milk. Pour into your pastry base.
3/ Bake:
Bake immediately in a pre-heated oven at 220°C, let it bake for 10 minutes then turn your oven down to 175°C and bake for a further 30 minutes.
