Does it mean notable for the time taken to develop the bouquet during a long fermentation, perhaps? Thoughts? Options?

Well, live and learn... I ruled out "aging process" (my first intended answer) because in several wine websites (including the one in my 1st reference), they indicate that "aroma" is produced by *young* wine. That's why I proposed "maturity" instead :-)

neutral Timothy Barton : I was about to write and say I wouldn't trust a site that wrote "aging", but I've just checked the dictionary and it's fine. - No. Raging and staging. Hence it should be "ageing" as English should always be as illogical as possible ;-)

Yes, it is standard in the US. And it makes sense, too. All that is needed to make the g soft is an i OR an e. And we don't write stageing or rageing (or do you in the UK?) Anyway, they did misspell currant. Now, is that an agree?

"Whether or not they make their own wine, wine lovers often have questions about how to age and store wine. The words aging and storing are often used interchangeably, but they don't mean exactly the same thing. Storing time refers to the period during which a wine maintains a pleasant and relatively harmonious aroma and taste. Aging, on the other hand, refers to the reactions that occur in the bottle (or the barrel), that gradually improve the wine or, unfortunately, lead to its decline. Aging is a phenomenon that occurs according to a cycle, during the storing period. For a certain time, the taste of the wine becomes more refined, reaching the peak of its taste and then slowly losing quality until the very end of the storing cycle."
