Hi, I would appreciate your help. It is machine used in a winery. It is a transcription.

Context is:
"Bien, como último proceso de la entrada de la uva en la bodega, se pasa por un intercambiador de frío, porque aunque vendimiamos por la noche y en las primeras horas de la madrugada aun así hay que enfriar más la uva. Es un proceso importantísimo, y lo que hacemos es pasarla por esta tubería y meterlo por este intercambiador de pastas dejando la uva a unos 11º, más o menos. Bueno como veis es una prensa totalmente en horizontal que lleva una membrana dentro que se hincha y presiona la pasta, la pasta es el mosto con la piel de la uva y la pepita, contra unas rejillas por las que sale el mosto."

Actually, I think the must does contain all those things anyway - at least that is how I understand it (I translated the complete wine-making process for a Bordeaux wine school only a few months ago!). In other words, the must consists of more than just the juice, but also the stalks, pips and skins (ie, the bits that contain the tannins).
That doesn't help with the "thermo exchanger" I know, but I'd tend to use something more universally understandable (without being condescending!). But of course this does depend on the register you require. Is it intended for scientists, engineers or academics, or more for the general public?

Will let you know if I find out anything more, but am currently stuck on my own translation - regarding the finer points of canal engineering - supposed to be a tourism document :))

I think I'd tend to say that the must consists of the juice, stalks, skins and pips.
That at least is accurate, but off-hand I don't know what is meant by "pasta". It definitely didn't feature in my winemaking translation.
Again, I'll let you know if I find anything, but, in the meantime, had better get on with the Meuse canal research! Due in tomorow...

Actually, I seem to remember that the stalks/stems are removed at the crushing stage - so I think your text has that part right! (sorry about that)

Shouldn't be too long with my translation, as the canal section is only 1 para, then the rest is plain sailing! Cheers!

thanks :) Although in the video it explains that the pasta is the must, skin and pips, would it still be a must cooler? why is it talking about pressing all three? I though that the cooler was a thermo exchanger (in Spanish intercambiador de frio).
Thanks for your time Carol. The text is a bit formal. You are right that must has all three, but I maybe it was thinking in a "pasty" sort of substance instead, so must wasn't making much sense. How would you translate pasta on its own then if it appears on its own. i don't want to use "Must (pasta) includes the must, skins and pips" Good luck with your translation ;)

Mi sugerencia. Aunque se vaya a enfriar siempre es un intercambiador de calor: algo se enfría y otro se calienta en el intercambiador.
