Oenology - anthocyanin structures
Hi everyone,
I'm currently translating a wine tasting guide written from a very in-depth oenological perspective for my MA dissertation and am completely at a loss to find the meaning of and correct equivalent for 'meticulacion' in this sentence. The context immediately prior to this involves images (which really must be viewed in order to understand the full context of the question - please see the URL below) of anthocyanin ring structures and discusses possible occurrences within them such as glycosidation and acylation.

I would be extremely grateful if anyone with knowledge of (oenological) chemical compounds could help me with this sentence, as I suspect there is more meaning behind it than I can hope to grasp without a more comprehensive knowledge of phenolic compounds and processes and have been utterly unable to find any enlightment for 'meticulacion' through online research. I am reluctant simply to stick in something simplistic such as 'meticulation of [the] hydroxyls in this ring' as it smacks of the need for explication. I explored the possibility of a 'methy-' stem but again have had little luck.
