I know that in the wine industry, a "fraccionador" is a bottler that buys wine in bulk and sells it without distinctions as to quality; but the "fraccionamiento en origen" has me stumped. Does it just refer to bottling by the original winemaker?

Syrah and Mourvèdre must account for a minimum of 40% of the blend in La Livinière, whilst Carignan and Cinsaut must account for no more than 40%. Grenache Noir can make up the balance. You may produce a pure Syrah, but are not allowed to say so the label. Whilst Syrah and Grenache grow stunningly well in the wild hills, Mourvèdre is more problematic, reacting badly to the ravages of the north wind and rarely ripening really well.

However, the essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France.

The wine list's impressive selection of half-bottles tempted me to order a Chateau Kirwan Margaux 1988, but the thought of an afternoon's driving persuaded me to stick with sparkling water. They serve bottled Welsh water here, which is just as well, as I have no time for the French stuff. Call me a literalist, but I've never forgiven Perrier since the time I read on the label that it is "bottled at Source", and then spent a frustrating (and fictional) month driving around France, hoping to discover the whereabouts of that wondrous spa town. My satellite navigation system blew to bits.

The words on a wine label indicating that 100 percent of the grapes in the wine were grown in the winery's own vineyards, or from vineyards (in the same APPELLATION) controlled by the winery through a long-term lease. Furthermore, such wines must be VINIFIED and bottled at that winery. The term château bottled has a comparable meaning. Both refer to a wine that's considered to be of superior quality and character.
