Hello everybody!

I'm working on an Excel spreadsheet and the terms appear in a long list I assume will be used on a website that sells cheese online.

I'm afraid I can't provide further context because the section that's causing me trouble is preceded by 'TIPOS DE QUESO' (Oveja, Cabra, Mezcla) and followed by FORMATO (Rueda, Cuña, Cortado, etc.)

Explanation:
Queso viejo: de 180 a 269 días (a partir de seis meses).
Queso añejo: más de 269 días de curación (a partir de nueve meses).

Depending on what you are using for curado and semicurado, you may need to use "old" for viejo.

Yes, I've used 'cured' for 'curado', which is what the company uses.

Mature vs. Aged

Mature meaning that it has been kept long enough and is now ready.
Aged almost equals old, but old has a negative connotation when describing food.
