I'm having trouble wrapping my brain around the expression "cordão" in this specific context.
Any ideas (or even synonyms in Portuguese) are much appreciated in advance!

It all depends on your audience - among champagne and sparkling wine industry professionals and wine aficionados, the steady stream of small bubbles is known as "perlage". (Google perlage because I don't have time to supply you with heaps of references). To a lay audience, you might want to use a different term - "cordon of bubbles" is quite good, as is "stream of bubbles". Sormane produced some good references but beware of "foam" and "mousse" - that's the bubbles that collect on the top of the glass (the "head" if it was beer) and doesn't refer to the rising stream of bubbles inside the wine in the glass.
