A hotel company's objects include 'la construction, l'achat, la vente, la *prise en option* ou en location de tous immeubles'. I'm afraid that's all the context I have so any suggestions would be much appreciated. Thanks in advance!

taking an option (UK: estate contract) ... over ...
Taking a pre-emption/letting option or on lease any properties are 2 different things. The first one might be an option to rent or buy.
In the UK, such an option would be an estate contract and need to be protected - in unregd. land - by a C(iv) land charge or - in regd. land -by a notice.

reserved/held
Items that have been reserved/held but are yet to be paid for. I'm sure there is a better way of rendering this in English, but I think this is the general idea.
As a simple example, plane/train tickets can be booked online with the option to pay later.
