just to sound a note of caution; this might for all I know mean just a nursery where plants are grown in trays in greenhouses rather than being planted directly in the ground. BUT do just note that in many other contexts, 'hors sol' is used to mean specifically the specialized cultivation technique of 'hydroponics'. Hopefully your wider context will make it clear!

Is what it boils down to. "Hors sol" means growing stuff without using soil. In practice, this amounts to growing stuff in liquid which contains all the necessary nutrients, i.e. hydroponics.

The traditional way to grow trees and shrubs is directly in the ground. Many modern nurseries produce plants in containers of various kinds using potting mixes which don't count as the "ground, ie "growing out of the ground".
