Generally, in Spanish medical texts we use "tasa de mortalidad". As to the adjective "total", I am not really sure if it should be simply erased, just like that. It will depend on the context surrounding the sentence you reproduced in your question, particularly if there are mentions on it to other, so to speak, more restricted "mortalities". Yes, it might the kind of "emphasizing" adjective so common in English. But beware of the context....
