Note: I have a problem with the phrase "total mortality" - isn't "total" redundant in this case?

me parece que lo que confunde es que en el original han puesto a la hiperglucemia posprandial como factor de riesgo de enfermedades intercalando su valor como factor de riesgo de mortalidad por toda causa entre las patolog�as, normalmente se pone al final

Yes, it sounds redundant....I would eliminate the word.

tasa de mortalidad/mortandad

Generally, in Spanish medical texts we use "tasa de mortalidad". As to the adjective "total", I am not really sure if it should be simply erased, just like that. It will depend on the context surrounding the sentence you reproduced in your question, particularly if there are mentions on it to other, so to speak, more restricted "mortalities". Yes, it might the kind of "emphasizing" adjective so common in English. But beware of the context....
