There is another line in the text, which says 'Shredded wheat square represents bone weakened with osteoporosis'. Therefore, I am sure it is used as a noun here to refer to the shape of the product.

I'm afraid 'square' is a VERB here. People like to use 'square and sqeeze' for some reason. You may want to confirm with your client in this regard.
