There are other ways to put it, but this is the most compact one, I believe.
Example sentence:

A salary sacrifice happens when an employee gives up the right to receive part of the cash pay due under his or her contract of employment.

disagree Charlesp : The use of the term "sacrifice" here could easily give rise to misinterpretation or misunderstanding. Anyway, it is a 'deduction.'
