Flattened rice (also called beaten rice) is a de-husked rice which is flattened into flat light dry flakes. These flakes of rice swell when added to liquid, whether hot or cold, as they absorb water, milk or any other liquids.

rice pudding

This is the closest term I could think of. Of course, variations from one country to another exist. I simply call it رز بحليب I also suggest you transliterate أرز معمر and then explain it by saying rice pudding or mentioning the major ingredients...etc.

Noha, in Lebanon also we call it رز بحليب but the word pudding in itself does not mean a sweet dish and then the context should clarify the matter

Aged rice

The advantages of aged rice are that rice grains do not stick with each other in cooking and retain more Protein content than freshly milled rice. The length of every grain increases more than double and volume of cooked rice become more than double. It has sweet taste, soft texture and extra elongation.

جزاك الله خيرا على إجابتك ولكني لم أوضح تشكيل المصطلح لأني أعلم أن كل المصريين يعرفون ما هو الأرز المعمر :) ولعلي إن شاء الله أتشرف بدعوتك لتناوله في مصر -- المقصود ليس كلمة مُعمِّر بكسر الميم ولكنها كلمة دارجة تعني الأرز المخلوط باللبن أو المضاف إليه لبن، ولأزيدك غرابة فهناك بعض الناس يقولون عليه الأرز المدسوس، كنت أتمنى أن أعرف كيف يترجم هذه الكلمة أحد زملائنا من غير المصريين لا شك أنها كانت ستكون عجباًا جزاك الله خيرا على مساعدتك مرة أخرى وبارك الله فيك
