La característica química más importante de la lecitina es su poder emulsionante. Las moléculas de fosfolípidos poseen una parte polar hidrofílica y otra apolar lipofílica, responsable por el poder de reducción de la tensión interfacial entre una mezcla aceite/agua por ejemplo. Ese poder emulsionante es utilizado en aplicaciones como bebidas, margarinas, aderezos, etc.; permitiendo la obtención de emulsiones tipo aceite/agua o agua/aceite.

The most important chemical characteristic of lecithin is its emulsifier power. The phospholipids molecules have a hydrophilic polar and a lypophilic apolar part, responsible for the reduction of the interfacial tension power between a mixture of oil/water for instance. That emulsifier power is used in applications as drinks, margarines, dressings, etc. allowing the emulsifier acquisition such as oil/water or water/oil.
